Description

Infusion through sous vide cooking is the process of extracting the flavor of an item and imparting it into a different medium. Sous vide cooking is a technique that involves sealing an ingredient inside a flexible plastic bag before cooking it in a water bath that permits precise temperature control. Weekly oil experiments were conducted; time, temperature, appearance and flavor profile were measured. The benefits of using the sous vide method for creating flavored oils is the development of more intense flavored.
